Italian Chicken Salad

Ingredients

  • ½ cup extra virgin olive oil
  • ⅓ cup Champagne vinegar (or use white wine vinegar)
  • 1 Tbsp Dijon mustard
  • 4 cups shredded rotisserie chicken (without skin)
  • 1 (12-oz) jar roasted red peppers, drained and chopped
  • 1 (2.25-oz) can sliced black olives, drained
  • 1 cup chopped celery
  • ½ cup thinly sliced fresh basil
  • 2 green onions, chopped
  • 1 (5-oz) pkg baby arugula

Instructions

  1. Whisk together oil, vinegar, and mustard in a large bowl.
  2. Add chicken, peppers, olives, celery, basil, and green onions; toss. Season with salt and pepper to taste. Serve over arugula.
