Green Chile Huevos Rancheros

Ingredients

  • ½ lb boneless, skinless chicken breast
  • 2 tsp salt-free Southwest chipotle seasoning (such as Mrs. Dash)
  • 2 zucchini, cut into ½-inch-thick slices
  • 1 small red onion, thinly sliced
  • 1 Tbsp vegetable oil
  • ⅛ tsp salt
  • 2 large eggs
  • ½ cup tomatillo salsa
  • 1 small tomato, cut into wedges
  • 1 avocado, sliced
  • 1 small jalapeño pepper, thinly sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Preheat grill or grill pan to medium-high heat.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; lightly coat both sides with cooking spray. Sprinkle with seasoning.
  3. Grill chicken, covered, 5 minutes per side or until done; thinly slice.
  4. Meanwhile, toss together zucchini, onion, oil, and ⅛ tsp salt on a baking sheet; spread in a single layer. Bake 15 minutes or until just tender.
  5. Meanwhile, fry eggs in a nonstick skillet to desired doneness.
  6. Divide zucchini between 2 plates; top with chicken, salsa, eggs, tomato wedges, avocado, jalapeño, and cilantro. Season with salt to taste.
