Peaches-and-Cream Quinoa Porridge

Ingredients
- 1 cup quinoa
- ½ tsp ground cinnamon
- 3 cups 1% low-fat milk
- 1 cup water
- 2 Tbsp honey
- 1 tsp vanilla extract
- ½ tsp salt
- 2 peaches, coarsely chopped
Instructions
- Cook quinoa and cinnamon in a large nonstick saucepan over medium heat 2 to 3 minutes or until lightly toasted.
- Stir in milk, water, honey, vanilla and salt; bring to a boil over medium-high heat.
- Reduce heat to low. Cover and cook 20 to 25 minutes or until quinoa is tender, stirring occasionally.
- Spoon quinoa mixture into bowls; top with peaches.
