Peaches-and-Cream Quinoa Porridge

Ingredients

  • 1 cup quinoa
  • ½ tsp ground cinnamon
  • 3 cups 1% low-fat milk
  • 1 cup water
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 peaches, coarsely chopped

Instructions

  1. Cook quinoa and cinnamon in a large nonstick saucepan over medium heat 2 to 3 minutes or until lightly toasted.
  2. Stir in milk, water, honey, vanilla and salt; bring to a boil over medium-high heat.
  3. Reduce heat to low. Cover and cook 20 to 25 minutes or until quinoa is tender, stirring occasionally.
  4. Spoon quinoa mixture into bowls; top with peaches.
