Turkey Bagel Sandwiches with Zesty Feta Spread

Ingredients

  • ¼ cup reduced-fat mayonnaise
  • ¼ cup crumbled feta cheese
  • 1 tsp fresh lemon juice
  • ¼ tsp grated lemon rind
  • ¼ tsp dried oregano
  • ¼ tsp pepper
  • 4 (1.5-oz) 100% whole wheat bagel thins, split 
  • 2 cups baby arugula
  • 8 oz deli-sliced low-sodium oven-roasted turkey
  • ¼ cup thinly sliced red onion

Instructions

  1. Combine mayonnaise, cheese, juice, rind, oregano, and pepper in a small bowl.
  2. Spread mayonnaise mixture over cut sides of bagels. Layer arugula, turkey, and onion over bottoms of bagels; cover with bagel tops.

Side Dish Ingredients

  • 1 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1 tsp honey
  • ⅛ tsp salt
  • 2 cups seedless red grapes, cut in half

Side Dish Instructions

  1. Whisk together vinegar, oil, honey, and salt in a large bowl. Add grapes; toss.
