Grilled Chicken with Warm Blueberry-Basil Salsa

Sweet Potatoes with Honey Butter

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 tsp salt, divided
  • ½ tsp black pepper
  • 1½ cups blueberries
  • ½ cup diced red onion
  • 3 Tbsp balsamic vinegar
  • 2 tsp honey
  • ¼ tsp crushed red pepper
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat grill to medium-high heat. Pound chicken to an even thickness using the heel of your hand or a meat mallet; rub with oil, and sprinkle with ½ tsp each salt and black pepper.
  2. Grill chicken, covered, 4 to 5 minutes per side or until done.
  3. Meanwhile, bring 1 cup blueberries, onion, vinegar, honey, red pepper, and ½ tsp salt to a boil in a saucepan. Reduce heat, and simmer 5 minutes; stir in ½ cup blueberries and basil.
  4. Serve salsa with chicken.

Side Dish Ingredients

  • 6 small plastic-wrapped microwavable sweet potatoes
  • ¼ cup butter, softened
  • 1 Tbsp honey
  • ½ tsp salt
  • ¼ tsp pepper 

Side Dish Instructions

  1. Microwave potatoes according to package directions; halve each potato lengthwise.
  2. Combine butter, honey, salt, and pepper; divide among potatoes.
