Grilled Chicken with Warm Blueberry-Basil Salsa
Sweet Potatoes with Honey ButterIngredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 tsp salt, divided
- ½ tsp black pepper
- 1½ cups blueberries
- ½ cup diced red onion
- 3 Tbsp balsamic vinegar
- 2 tsp honey
- ¼ tsp crushed red pepper
- ¼ cup chopped fresh basil
Instructions
- Preheat grill to medium-high heat. Pound chicken to an even thickness using the heel of your hand or a meat mallet; rub with oil, and sprinkle with ½ tsp each salt and black pepper.
- Grill chicken, covered, 4 to 5 minutes per side or until done.
- Meanwhile, bring 1 cup blueberries, onion, vinegar, honey, red pepper, and ½ tsp salt to a boil in a saucepan. Reduce heat, and simmer 5 minutes; stir in ½ cup blueberries and basil.
- Serve salsa with chicken.

- 6 small plastic-wrapped microwavable sweet potatoes
- ¼ cup butter, softened
- 1 Tbsp honey
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Microwave potatoes according to package directions; halve each potato lengthwise.
- Combine butter, honey, salt, and pepper; divide among potatoes.
