Grilled Ancho Chile Pork Tenderloin

Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp ancho chile powder (such as McCormick)
  • 1 Tbsp minced garlic
  • 1¼ tsp ground cumin
  • 1 tsp kosher salt
  • 1 tsp pepper
  • ¾ tsp brown sugar
  • ½ tsp ground coriander
  • 2 (1-lb) pork tenderloin
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat grill to medium-high heat. Combine first 8 ingredients in a small bowl. Rub paste over pork.
  2. Grill pork, covered, 12 to 15 minutes or until a meat thermometer inserted into thickest portion reads 145°F, turning every 2 minutes.
  3. Let stand 5 minutes before slicing. Sprinkle with cilantro.

Side Dish Ingredients

  • 1 (16-oz) cored pineapple, cut into rings
  • 1 red onion, cut into rings
  • 3 Tbsp olive oil, divided
  • 1 Tbsp fresh lime juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (9-oz) pkg mixed greens
  • ½ cup crumbled cotija cheese

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush pineapple and onion with 1 Tbsp oil; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until well marked on both sides. Coarsely chop.
  2. Meanwhile, whisk together 2 Tbsp oil, lime juice, salt, and pepper.
  3. Gently combine greens, pineapple, onion, and oil mixture in a large bowl; sprinkle with cheese.
