Layered Greek Salad

Sea Salt Pita Crackers and Hummus

Ingredients

  • 1 seedless cucumber, chopped
  • 1 (5.3-oz) carton Greek-style yogurt
  • ½ cup mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 tsp dried dill
  • 1 (10-oz) bag mixed greens
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 small red onion, chopped
  • 2 Roma tomatoes, seeded and chopped
  • ½ cup pitted kalamata olives
  • 1 cup crumbled feta cheese

Instructions

  1. Stir together cucumber, yogurt, mayonnaise, lemon juice, and dill in a small bowl.
  2. Layer lettuce, chickpeas, red onion, tomatoes, olives, and feta in a large serving bowl. Spread cucumber mixture over salad .

Side Dish Ingredients

  • 1 (8-oz) pkg sea salt pita chips
  • 1 (8-oz) tub hummus, your favorite flavor

Side Dish Instructions

  1. Serve pita crackers and hummus on the side.
