Cannellini Bean Salad with Zucchini and Green Beans

Ingredients

  • 2 zucchini
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • ½ lb fresh green beans, trimmed and cut into ½-inch pieces
  • 2 Roma tomatoes, chopped
  • ½ cup chopped fresh basil
  • 1 tsp lemon zest
  • ¼ cup fresh lemon juice
  • 2 Tbsp extra virgin olive oil

Instructions

  1. Cut zucchini in half lengthwise, and thinly slice.
  2. Combine zucchini, cannellini beans, green beans, tomato, basil, lemon rind, lemon juice, oil, and ½ tsp each of salt and pepper; toss to combine.

  • 2 Tbsp extra virgin olive oil
  • ½ Tbsp balsamic vinegar
  • ½ Tbsp fresh lemon juice
  • 1 watermelon, cut into large chunks

Side Dish Instructions

  1. Whisk together oil, vinegar, lemon juice, and ¼ tsp each of salt and pepper in a small bowl.
  2. Place watermelon in a serving bowl; drizzle with vinaigrette, tossing to coat.
