Cannellini Bean Salad with Zucchini and Green Beans
Watermelon with Balsamic Drizzle
Ingredients
- 2 zucchini
- 2 (15-oz) cans cannellini beans, drained and rinsed
- ½ lb fresh green beans, trimmed and cut into ½-inch pieces
- 2 Roma tomatoes, chopped
- ½ cup chopped fresh basil
- 1 tsp lemon zest
- ¼ cup fresh lemon juice
- 2 Tbsp extra virgin olive oil
Instructions
- Cut zucchini in half lengthwise, and thinly slice.
- Combine zucchini, cannellini beans, green beans, tomato, basil, lemon rind, lemon juice, oil, and ½ tsp each of salt and pepper; toss to combine.

- 2 Tbsp extra virgin olive oil
- ½ Tbsp balsamic vinegar
- ½ Tbsp fresh lemon juice
- 1 watermelon, cut into large chunks
Side Dish Instructions
- Whisk together oil, vinegar, lemon juice, and ¼ tsp each of salt and pepper in a small bowl.
- Place watermelon in a serving bowl; drizzle with vinaigrette, tossing to coat.
