Spanish Chicken Skillet

Ingredients

  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb ground chicken (or use ground beef)
  • 2 Tbsp chili powder
  • 1 tsp ground coriander
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (14.5-oz) can diced tomatoes, drained
  • ½ cup chopped fresh cilantro

Instructions

  1. Cook onion, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 6 minutes or until tender.
  2. Add chicken, chili powder, coriander, salt, and pepper. Cook 5 minutes or until chicken is crumbly and no longer pink. Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 2 cups frozen green peas, thawed
  • 2 Tbsp butter
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp finely chopped fresh parsley

Side Dish Instructions

  1. Cook rice according to package directions, adding peas during last 5 minutes of cooking.
  2. Stir in butter, salt, and pepper; fluff with a fork. Sprinkle with parsley.
