Spanish Chicken Skillet
Green Pea RiceIngredients
- 1 onion, chopped
- 1 red bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ lb ground chicken (or use ground beef)
- 2 Tbsp chili powder
- 1 tsp ground coriander
- ½ tsp salt
- ½ tsp pepper
- 1 (14.5-oz) can diced tomatoes, drained
- ½ cup chopped fresh cilantro
Instructions
- Cook onion, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 6 minutes or until tender.
- Add chicken, chili powder, coriander, salt, and pepper. Cook 5 minutes or until chicken is crumbly and no longer pink. Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.
Side Dish Ingredients
- 1½ cups long-grain white rice
- 2 cups frozen green peas, thawed
- 2 Tbsp butter
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp finely chopped fresh parsley
Side Dish Instructions
- Cook rice according to package directions, adding peas during last 5 minutes of cooking.
- Stir in butter, salt, and pepper; fluff with a fork. Sprinkle with parsley.
