Ratatouille with Quinoa

Ingredients

  • ½ cup chopped onion
  • 2 Tbsp olive oil
  • 1 small eggplant, diced
  • 1 small zucchini, chopped
  • 1 small red bell pepper, chopped
  • 1 tomato, chopped
  • 1 tsp dried basil
  • ¼ tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup quinoa

Instructions

  1. Sauté onion in hot oil in a Dutch oven over medium heat 3 minutes or until just tender; add eggplant. Cook 5 minutes or until lightly browned.
  2. Stir in zucchini, bell pepper, tomato, basil, thyme, salt, and pepper. Cook 10 minutes or until tender.
  3. Meanwhile, prepare quinoa according to package directions. Serve ratatouille over quinoa.

Side Dish Ingredients

  • ½ lb green beans
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ⅛ tsp dried oregano
  • ⅛ tsp dried basil
  • 1 clove garlic, minced

Side Dish Instructions

  1. Steam beans in a steamer basket over boiling water 4 minutes or until tender. Cool.
  2. Place green beans in a bowl. Add oil, vinegar, oregano, basil, and garlic; toss gently.
