Ratatouille with Quinoa
Green Bean Salad
Ingredients
- ½ cup chopped onion
- 2 Tbsp olive oil
- 1 small eggplant, diced
- 1 small zucchini, chopped
- 1 small red bell pepper, chopped
- 1 tomato, chopped
- 1 tsp dried basil
- ¼ tsp dried thyme
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup quinoa
Instructions
- Sauté onion in hot oil in a Dutch oven over medium heat 3 minutes or until just tender; add eggplant. Cook 5 minutes or until lightly browned.
- Stir in zucchini, bell pepper, tomato, basil, thyme, salt, and pepper. Cook 10 minutes or until tender.
- Meanwhile, prepare quinoa according to package directions. Serve ratatouille over quinoa.
Side Dish Ingredients
- ½ lb green beans
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- ⅛ tsp dried oregano
- ⅛ tsp dried basil
- 1 clove garlic, minced
Side Dish Instructions
- Steam beans in a steamer basket over boiling water 4 minutes or until tender. Cool.
- Place green beans in a bowl. Add oil, vinegar, oregano, basil, and garlic; toss gently.
