Jerk Pork Tenderloin with Blackberry Sauce
Lemony Broccoli
Ingredients
- ¾ lb pork tenderloin, trimmed
- 2 tsp Caribbean Jerk seasoning
- 1 Tbsp olive oil
- ½ cup sugar-free seedless blackberry preserves
- 3 Tbsp Dijon mustard
- ½ Tbsp orange zest
- 1½ Tbsp fresh orange juice
- ¼ tsp ground ginger
- ½ cup blackberries
Instructions
- Preheat oven to 425°F. Rub pork with Jerk seasoning.
- Cook pork in hot oil in an ovenproof skillet over medium-high heat 3 minutes per side. Transfer skillet to oven, and bake 10 to 15 minutes or until a meat thermometer inserted into thickest portion reads 145°F.
- Meanwhile, stir together preserves, mustard, orange zest, orange juice, and ginger in a small saucepan. Cook over medium heat, whisking constantly, until thoroughly heated.
- Slice pork, and serve with sauce. Garnish with blackberries.

- 2 cups broccoli florets
- 2 Tbsp water
- 1 Tbsp olive oil
- 1 tsp lemon juice
Side Dish Instructions
- Combine broccoli and water in a microwave-safe bowl; cover with plastic wrap, and vent 1 corner.
- Microwave at HIGH 2 to 3 minutes or until crisp-tender. Drain and toss hot broccoli with oil and lemon juice. Season with salt and pepper to taste.
