Tuscan Flank Steak with Roasted Red Pepper Sauce
Yellow Squash Sauté
Ingredients
- 1½ tsp Italian seasoning
- ½ tsp pepper
- ½ tsp garlic powder
- ¼ tsp paprika
- ½ lb flank steak
- 1 (12-oz) jar roasted red peppers, drained
- ½ cup chicken broth
- 2 tsp balsamic vinegar
- 3 Tbsp chopped fresh basil
Instructions
- Combine Italian seasoning, pepper, garlic powder, and paprika. Rub over steak, and transfer to a lightly greased broiler pan. Let stand 10 minutes.
- Process peppers, broth, vinegar, and basil in a blender or food processor until smooth. Transfer to a small saucepan; cook over medium heat 5 minutes or until thickened.
- Preheat broiler. Broil steak 7 to 10 minutes, turning once, or to desired doneness. Let stand 10 minutes before thinly slicing across the grain. Spoon sauce over steak.
Side Dish Ingredients
- ⅓ cup chopped onion
- 1 tsp olive oil
- ½ lb yellow squash, sliced
Side Dish Instructions
- Cook onion in hot oil in a medium nonstick skillet over medium-high heat 3 minutes or until lightly browned, stirring occasionally.
- Stir in squash; cook 4 minutes or until crisp-tender. Season with salt and pepper to taste.
