Tuscan Flank Steak with Roasted Red Pepper Sauce

Ingredients

  • 1½ tsp Italian seasoning
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ½ lb flank steak
  • 1 (12-oz) jar roasted red peppers, drained
  • ½ cup chicken broth
  • 2 tsp balsamic vinegar
  • 3 Tbsp chopped fresh basil

Instructions

  1. Combine Italian seasoning, pepper, garlic powder, and paprika. Rub over steak, and transfer to a lightly greased broiler pan. Let stand 10 minutes.
  2. Process peppers, broth, vinegar, and basil in a blender or food processor until smooth. Transfer to a small saucepan; cook over medium heat 5 minutes or until thickened.
  3. Preheat broiler. Broil steak 7 to 10 minutes, turning once, or to desired doneness. Let stand 10 minutes before thinly slicing across the grain. Spoon sauce over steak.

Side Dish Ingredients

  • ⅓ cup chopped onion
  • 1 tsp olive oil
  • ½ lb yellow squash, sliced

Side Dish Instructions

  1. Cook onion in hot oil in a medium nonstick skillet over medium-high heat 3 minutes or until lightly browned, stirring occasionally.
  2. Stir in squash; cook 4 minutes or until crisp-tender. Season with salt and pepper to taste.
