Overnight Breakfast Bulgur with Cherries and Toasted Almonds

Ingredients

  • 1 cup bulgur wheat
  • 1½ cups 1% low-fat milk
  • ¼ tsp salt
  • ¼ cup sliced almonds
  • ½ cup fat-free plain Greek yogurt
  • ½ tsp ground cinnamon
  • 1 (12-oz) pkg frozen sweet cherries, thawed
  • 2 Tbsp honey

Instructions

  1. Combine bulgur, milk and salt in a large bowl; cover and chill overnight.
  2. Meanwhile, toast almonds in a dry skillet over medium-high heat 2 to 3 minutes or until golden and fragrant.
  3. Stir together yogurt and cinnamon.
  4. Fluff bulgur with a fork. Spoon into 4 bowls; top with yogurt, cherries, and almonds; drizzle with honey.
