Teriyaki Beef and Vegetables

Sesame-Garlic Noodles

Ingredients

  • ½ lb ground beef
  • ½ onion, chopped
  • 1 zucchini, cut into chunks
  • 1 crown broccoli, cut into florets
  • ½ (8-oz) pkg whole mushrooms, quartered
  • 1 Tbsp dark sesame oil
  • ¼ cup chicken broth
  • 3 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 1½ Tbsp rice vinegar
  • 1 Tbsp cornstarch

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and keep warm.
  2. Cook onion, zucchini, broccoli, and mushrooms in hot oil in skillet over medium-high heat 8 minutes or until tender. Return beef to skillet.
  3. Whisk together broth and remaining ingredients. Pour over beef mixture, and cook 2 minutes or until sauce is thickened. Serve over Sesame-Garlic Noodles recipe.

Side Dish Ingredients

  • ½ (16-oz) pkg thin spaghetti
  • 1 clove garlic, minced
  • 1½ Tbsp dark sesame oil
  • ½ Tbsp sesame seeds

Side Dish Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Sauté garlic in hot oil in a Dutch oven over medium heat 1 minute; add pasta, sesame seeds, and pasta water. Cook 1 minute or until thoroughly heated.
