Tex-Mex Frittata

Spicy Jicama Sticks

Ingredients

  • ½ zucchini, sliced
  • ½ cup thinly sliced onion 
  • ½ Tbsp minced garlic
  • ½ Tbsp olive oil
  • ½ (15-oz) can black beans, drained and rinsed
  • 6 large eggs, lightly beaten
  • ½ cup shredded sharp Cheddar cheese
  • 1 avocado, sliced
  • ¼ cup fresh salsa

Instructions

  1. Preheat oven to 375°F. Cook zucchini, onion, and garlic in hot oil in a small ovenproof skillet over medium heat 5 minutes. Stir in beans.
  2. Whisk together eggs, cheese, and desired amount of salt and pepper in a large bowl; gradually pour over zucchini-bean mixture in skillet.
  3. Transfer skillet to oven, and bake 20 minutes or until beginning to brown and center is set. Top with avocado and salsa.

Side Dish Ingredients

  • 1 cup matchstick-cut jicama (see note)
  • 1½ tsp fresh lime juice
  • ⅛ tsp chili powder
  • ⅛ tsp cayenne pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Drizzle jicama with lime juice, and sprinkle with chili powder, pepper, and salt.
