Tex-Mex Frittata
Spicy Jicama Sticks
Ingredients
- ½ zucchini, sliced
- ½ cup thinly sliced onion
- ½ Tbsp minced garlic
- ½ Tbsp olive oil
- ½ (15-oz) can black beans, drained and rinsed
- 6 large eggs, lightly beaten
- ½ cup shredded sharp Cheddar cheese
- 1 avocado, sliced
- ¼ cup fresh salsa
Instructions
- Preheat oven to 375°F. Cook zucchini, onion, and garlic in hot oil in a small ovenproof skillet over medium heat 5 minutes. Stir in beans.
- Whisk together eggs, cheese, and desired amount of salt and pepper in a large bowl; gradually pour over zucchini-bean mixture in skillet.
- Transfer skillet to oven, and bake 20 minutes or until beginning to brown and center is set. Top with avocado and salsa.
Side Dish Ingredients
- 1 cup matchstick-cut jicama (see note)
- 1½ tsp fresh lime juice
- ⅛ tsp chili powder
- ⅛ tsp cayenne pepper
- ⅛ tsp salt
Side Dish Instructions
- Drizzle jicama with lime juice, and sprinkle with chili powder, pepper, and salt.
