Thai Turkey Burgers
Spicy Edamame-Bell Pepper Salad
Ingredients
- 1½ lb ground turkey
- 6 Tbsp black bean sauce with garlic, divided
- 1 Tbsp ginger paste
- 6 Tbsp mayonnaise
- 1 (12-oz) pkg sesame Asian salad kit (such as Eat Smart)
- ½ cup chopped fresh cilantro
- 6 (1.9-oz) hamburger buns (preferably whole wheat)
- 1 English cucumber, sliced
Instructions
- Preheat grill to medium-high heat. Gently combine turkey, 3 Tbsp black bean sauce, and ginger paste; shape into 6 patties.
- Grill burgers, covered, 4 to 5 minutes per side or until centers are no longer pink.
- Meanwhile, combine 3 Tbsp black bean sauce and mayonnaise. Prepare salad kit according to package directions; stir in cilantro.
- Spread 1 Tbsp mayonnaise mixture onto each bun. Serve burgers, salad mixture, and cucumbers on buns.
Side Dish Ingredients
- 2 Tbsp dark sesame oil
- 1 Tbsp rice wine vinegar
- 2 tsp low-sodium soy sauce
- ¼ cup chopped fresh mint
- ¼ tsp crushed red pepper
- 1 (10-oz) pkg refrigerated shelled edamame
- 1 (8-oz) pkg diced three-pepper mix
Side Dish Instructions
- Whisk together oil, vinegar, soy sauce, mint, and red pepper in a bowl. Add edamame and pepper mix; toss.
