Veggie-Beef Sloppy Joes
Sautéed ZoodlesIngredients
- 1½ lb grass-fed ground beef
- 2 carrots, chopped
- 2 bell peppers, chopped (any color)
- 1 onion, chopped
- 1 (6-oz) can tomato paste
- ¾ cup low-sodium chicken broth
- 1½ Tbsp Montreal steak seasoning
- 2 tsp yellow mustard
- 2 tsp apple cider vinegar
- 2 tsp unsulfured molasses
Instructions
- Cook ground beef in a large skillet over medium heat until beef is browned, stirring to crumble; drain. Transfer to a 5- to 7-quart slow cooker.
- Add carrots, bell peppers and onion. Stir in tomato paste, broth, steak seasoning, mustard, vinegar and molasses.
- Cover and cook on LOW 8 hours. Serve over Sautéed Zoodles.
Side Dish Ingredients
- 4 zucchini
- 1 clove garlic, minced
- 2 Tbsp avocado oil
Side Dish Instructions
- Using a spiralizer, cut zucchini into noodles, or cut zucchini lengthwise into ¼-inch-thick slices.
- Stack zucchini slices, 3 at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Cook zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated.
- Season with salt and pepper to taste.
