Veggie-Beef Sloppy Joes

Ingredients

  • 1½ lb grass-fed ground beef
  • 2 carrots, chopped
  • 2 bell peppers, chopped (any color)
  • 1 onion, chopped
  • 1 (6-oz) can tomato paste
  • ¾ cup low-sodium chicken broth
  • 1½ Tbsp Montreal steak seasoning
  • 2 tsp yellow mustard
  • 2 tsp apple cider vinegar
  • 2 tsp unsulfured molasses

Instructions

  1. Cook ground beef in a large skillet over medium heat until beef is browned, stirring to crumble; drain. Transfer to a 5- to 7-quart slow cooker.
  2. Add carrots, bell peppers and onion. Stir in tomato paste, broth, steak seasoning, mustard, vinegar and molasses.
  3. Cover and cook on LOW 8 hours. Serve over Sautéed Zoodles.

Side Dish Ingredients

  • 4 zucchini
  • 1 clove garlic, minced
  • 2 Tbsp avocado oil

Side Dish Instructions

  1. Using a spiralizer, cut zucchini into noodles, or cut zucchini lengthwise into ¼-inch-thick slices.
  2. Stack zucchini slices, 3 at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  3. Cook zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated.
  4. Season with salt and pepper to taste.
