Tex-Mex Steak Bowls

Ingredients

  • 3 (12.7-oz) pkg frozen Southwest-style whole grains, black bean, and corn blend (see Note)
  • 1½ lb top sirloin steak, cubed
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 avocados, sliced
  • 1 cup refrigerated salsa
  • 6 Tbsp reduced-fat sour cream

Instructions

  1. Cook frozen blend according to package directions.
  2. Meanwhile, toss steak with cumin, salt, and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until browned on all sides.
  3. Arrange Southwest blend, steak, lettuce, and avocado in 6 bowls; top with salsa and sour cream.
