Tex-Mex Steak Bowls
Ingredients
- 3 (12.7-oz) pkg frozen Southwest-style whole grains, black bean, and corn blend (see Note)
- 1½ lb top sirloin steak, cubed
- ½ tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 (10-oz) pkg chopped romaine lettuce
- 2 avocados, sliced
- 1 cup refrigerated salsa
- 6 Tbsp reduced-fat sour cream
Instructions
- Cook frozen blend according to package directions.
- Meanwhile, toss steak with cumin, salt, and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until browned on all sides.
- Arrange Southwest blend, steak, lettuce, and avocado in 6 bowls; top with salsa and sour cream.
