Italian Meatball Macaroni and Cheese

Roasted Carrots and Garlic Bread

Ingredients

  • 1 (16-oz) pkg radiatore pasta (or use fusilli or rigatoni)
  • 1 (20-oz) pkg Italian-style frozen meatballs
  • 4 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 3 cups milk
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp dried oregano
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 (24-oz) jar pasta sauce
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; keep warm.
  2. Cook meatballs according to package directions; keep warm.
  3. Melt butter over medium heat in a large Dutch oven; whisk in flour, and cook, whisking constantly, 2 minutes. Gradually whisk in milk, garlic, salt, pepper, and oregano.
  4. Cook, whisking constantly, 5 minutes or until mixture thickens. Stir in mozzarella and cooked pasta. Spoon into a lightly greased 13-x 9-inch baking dish; top with meatballs, pasta sauce, and Parmesan.
  5. Bake 30 minutes or until bubbly.

Side Dish Ingredients

  • 2 lb large carrots, sliced ½-inch thick
  • 3 Tbsp olive oil
  • 1 (11.75 -oz) pkg frozen garlic bread

Side Dish Instructions

  1. Preheat oven to 425°F. Toss carrots with oil on a rimmed baking sheet; season lightly with salt and pepper.
  2. Bake 18 to 20 minutes or until tender.
  3. Adjust oven temperature, and bake garlic bread according to package directions. Slice to serve.
