Italian Meatball Macaroni and Cheese
Roasted Carrots and Garlic Bread
Ingredients
- 1 (16-oz) pkg radiatore pasta (or use fusilli or rigatoni)
- 1 (20-oz) pkg Italian-style frozen meatballs
- 4 Tbsp butter
- 4 Tbsp all-purpose flour
- 3 cups milk
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
- ½ tsp dried oregano
- 1 (8-oz) pkg shredded mozzarella cheese
- 1 (24-oz) jar pasta sauce
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions; keep warm.
- Cook meatballs according to package directions; keep warm.
- Melt butter over medium heat in a large Dutch oven; whisk in flour, and cook, whisking constantly, 2 minutes. Gradually whisk in milk, garlic, salt, pepper, and oregano.
- Cook, whisking constantly, 5 minutes or until mixture thickens. Stir in mozzarella and cooked pasta. Spoon into a lightly greased 13-x 9-inch baking dish; top with meatballs, pasta sauce, and Parmesan.
- Bake 30 minutes or until bubbly.
Side Dish Ingredients
- 2 lb large carrots, sliced ½-inch thick
- 3 Tbsp olive oil
- 1 (11.75 -oz) pkg frozen garlic bread
Side Dish Instructions
- Preheat oven to 425°F. Toss carrots with oil on a rimmed baking sheet; season lightly with salt and pepper.
- Bake 18 to 20 minutes or until tender.
- Adjust oven temperature, and bake garlic bread according to package directions. Slice to serve.
