Five-Spice Pork Tenderloin with Orange-Cucumber Salad

Ingredients

  • 3 Tbsp brown sugar
  • 2½ tsp Chinese five-spice powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • 2 (1-lb) pork tenderloin, trimmed
  • 2 oranges, sectioned
  • 1 cucumber, thinly sliced
  • 4 green onions, sliced

Instructions

  1. Preheat oven to 425°F. Stir together sugar, five-spice powder, salt, and garlic powder; reserve 1 tsp mixture. Rub remaining sugar mixture over pork.
  2. Place pork on a foil-lined baking sheet. Bake 20 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 5 minutes.
  3. Meanwhile, toss together orange sections, cucumber, green onions, and 1 tsp brown sugar mixture. Slice pork, and serve with salad.
