Marinara-Poached Eggs with English Muffins

Ingredients
- 2 cups low-sodium marinara sauce
- 4 large eggs
- ½ cup crumbled goat cheese
- ¼ cup torn fresh basil
- 4 whole-grain English muffins, toasted
Instructions
- Bring marinara sauce to a boil in a saucepan or deep skillet over medium-high heat; reduce heat to medium.
- Make 4 indentations in sauce; crack 1 egg into each indention. Sprinkle lightly with pepper. Cover and cook 3 to 4 minutes or until whites are set and yolks are cooked to desired doneness.
- Sprinkle with cheese and basil. Serve with English muffins.
