Marinara-Poached Eggs with English Muffins

Ingredients

  • 2 cups low-sodium marinara sauce
  • 4 large eggs
  • ½ cup crumbled goat cheese
  • ¼ cup torn fresh basil
  • 4 whole-grain English muffins, toasted

Instructions

  1. Bring marinara sauce to a boil in a saucepan or deep skillet over medium-high heat; reduce heat to medium.
  2. Make 4 indentations in sauce; crack 1 egg into each indention. Sprinkle lightly with pepper. Cover and cook 3 to 4 minutes or until whites are set and yolks are cooked to desired doneness.
  3. Sprinkle with cheese and basil. Serve with English muffins.
