Southwest Black Bean and Corn "Tabbouleh"
Avocado Slices with Cotija Cheese
Ingredients
- 1½ cups bulgur wheat
- 2 (15-oz) cans black beans, drained and rinsed
- 2 cups corn kernels
- 1 cup fresh salsa
- 1 cup chopped fresh cilantro
- 1 (8-oz) pkg chopped onions
- ⅓ cup cilantro-lime vinaigrette (such as Sam's Choice)
- 1 Tbsp Southwest seasoning (or use fajita seasoning)
Instructions
- Cook bulgur according to package directions.
- Combine bulgur, beans, corn, salsa, cilantro, and onion in a large bowl. Whisk together vinaigrette and seasoning; pour over bulgur mixture, and stir until blended.
Side Dish Ingredients
- 2 avocados, sliced
- 2 Tbsp fresh lime juice
- 1 Tbsp extra virgin olive oil
- ¼ tsp kosher salt
- ¼ tsp pepper
- ¼ cup crumbled cotija cheese
Side Dish Instructions
- Place avocados on a platter. Drizzle with lime juice and oil; sprinkle with salt, pepper, and cheese.
