Farro with Chicken, Mixed Greens, and Almonds
Parmesan-Pesto Multigrain Rolls
Ingredients
- 3 cups low-sodium chicken broth
- 1½ cups pearled farro
- ½ tsp garlic salt
- 3 cups shredded rotisserie chicken
- 1 (6-oz) pkg diced celery
- ½ cup diced red onion
- 1 (12.9-oz) pkg cherry, almond, and bleu cheese salad kit (such as Fresh Express; see Note)
- 2 Tbsp fresh lemon juice
- ½ tsp pepper
Instructions
- Bring broth, farro, and garlic salt to a boil in a saucepan over medium heat. Cover, reduce heat, and simmer 20 to 25 minutes or until farro is tender.
- Toss together farro, chicken, celery, onion, ingredients from salad kit, lemon juice, and pepper in a large bowl.
Side Dish Ingredients
- 6 (1.8-oz) frozen multigrain dinner rolls (such as Pepperidge Farm)
- 3 Tbsp pesto
- 2 Tbsp shredded Parmesan cheese
Side Dish Instructions
- Heat rolls according to package directions. Spread pesto over warm rolls; sprinkle with cheese.
