Ingredients

  • 1 (8-oz) pkg rice noodles
  • 1 (12-oz) pkg chopped Asian sesame salad kit (such as Eat Smart)
  • 2 Tbsp fresh lime juice
  • 2 Tbsp dark sesame oil
  • ¼ tsp crushed red pepper
  • 2 cups shredded rotisserie chicken
  • ½ cup chopped fresh cilantro
  • ½ cup chopped fresh mint

Instructions

  1. Cook noodles according to package directions.
  2. Whisk together dressing from salad kit, lime juice, oil, and red pepper.
  3. Combine dressing, noodles, salad greens from kit, and chicken. Sprinkle salad kit toppings, cilantro, and mint over noodle mixture.
