Vietnamese Chicken and Noodle Salad
Ingredients
- 1 (8-oz) pkg rice noodles
- 1 (12-oz) pkg chopped Asian sesame salad kit (such as Eat Smart)
- 2 Tbsp fresh lime juice
- 2 Tbsp dark sesame oil
- ¼ tsp crushed red pepper
- 2 cups shredded rotisserie chicken
- ½ cup chopped fresh cilantro
- ½ cup chopped fresh mint
Instructions
- Cook noodles according to package directions.
- Whisk together dressing from salad kit, lime juice, oil, and red pepper.
- Combine dressing, noodles, salad greens from kit, and chicken. Sprinkle salad kit toppings, cilantro, and mint over noodle mixture.
