Lemon-Basil Salmon
Asparagus Orzo
Ingredients
- 2 lb salmon fillets
- ½ tsp salt
- ½ tsp pepper
- 6 Tbsp olive-oil mayonnaise
- 2 tsp lemon zest
- 1 Tbsp fresh lemon juice
- 2 Tbsp chopped fresh basil
Instructions
- Preheat oven to 450°F. Place fish on a lightly greased foil-lined baking sheet; sprinkle with salt and pepper.
- Stir together mayonnaise, lemon zest, lemon juice, and basil; brush on fish.
- Bake 8 minutes or until fish is almost done; increase oven temperature to broil. Broil 2 minutes or until topping is browned and bubbly and fish flakes with a fork.
Side Dish Ingredients
- 1 (16-oz) pkg whole wheat orzo
- 1 lb asparagus, cut into 1-inch pieces
- 2 Tbsp extra virgin olive oil
Side Dish Instructions
- Cook orzo according to package directions in a large saucepan, adding asparagus during last 5 minutes of cooking; drain.
- Toss orzo mixture with oil and salt and pepper to taste.
