Lemon-Basil Salmon

Asparagus Orzo

Ingredients

  • 2 lb salmon fillets
  • ½ tsp salt
  • ½ tsp pepper
  • 6 Tbsp olive-oil mayonnaise
  • 2 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat oven to 450°F. Place fish on a lightly greased foil-lined baking sheet; sprinkle with salt and pepper.
  2. Stir together mayonnaise, lemon zest, lemon juice, and basil; brush on fish.
  3. Bake 8 minutes or until fish is almost done; increase oven temperature to broil. Broil 2 minutes or until topping is browned and bubbly and fish flakes with a fork.

Side Dish Ingredients

  • 1 (16-oz) pkg whole wheat orzo
  • 1 lb asparagus, cut into 1-inch pieces
  • 2 Tbsp extra virgin olive oil

Side Dish Instructions

  1. Cook orzo according to package directions in a large saucepan, adding asparagus during last 5 minutes of cooking; drain.
  2. Toss orzo mixture with oil and salt and pepper to taste.
