Tomato and Cucumber Toss with Pesto Dressing

Ingredients

  • 1 lb nitrate-free smoked sausage, cut into ½-inch pieces
  • 12 small organic red potatoes
  • 6 ears corn, shucked and halved
  • 1 sweet onion, quartered
  • 2 lemons, halved
  • 5 cups water
  • 2 Tbsp Old Bay seasoning
  • 2 bay leaves
  • 1½ lb unpeeled shrimp (See Note)

Instructions

  1. Combine sausage, potatoes, corn, onion, lemons, and water in a large Dutch oven. Stir in Old Bay seasoning and bay leaves.
  2. Bring to a boil. Reduce heat, and simmer 10 minutes or until corn and potatoes are tender. Add shrimp; cook 2 minutes or until shrimp turn pink. Drain and serve on a large platter.

Side Dish Ingredients

  • 3 organic tomatoes, cut into wedges
  • 2 large organic cucumbers, peeled and cut into chunks
  • 3 Tbsp pesto
  • 1 Tbsp olive oil
  • 2 tsp white wine vinegar

Side Dish Instructions

  1. Combine tomatoes and cucumbers in a bowl. Whisk together remaining ingredients. Pour dressing over tomato mixture, and toss.
