Tomato and Cucumber Toss with Pesto Dressing
Ingredients
- 1 lb nitrate-free smoked sausage, cut into ½-inch pieces
- 12 small organic red potatoes
- 6 ears corn, shucked and halved
- 1 sweet onion, quartered
- 2 lemons, halved
- 5 cups water
- 2 Tbsp Old Bay seasoning
- 2 bay leaves
- 1½ lb unpeeled shrimp (See Note)
Instructions
- Combine sausage, potatoes, corn, onion, lemons, and water in a large Dutch oven. Stir in Old Bay seasoning and bay leaves.
- Bring to a boil. Reduce heat, and simmer 10 minutes or until corn and potatoes are tender. Add shrimp; cook 2 minutes or until shrimp turn pink. Drain and serve on a large platter.
Side Dish Ingredients
- 3 organic tomatoes, cut into wedges
- 2 large organic cucumbers, peeled and cut into chunks
- 3 Tbsp pesto
- 1 Tbsp olive oil
- 2 tsp white wine vinegar
Side Dish Instructions
- Combine tomatoes and cucumbers in a bowl. Whisk together remaining ingredients. Pour dressing over tomato mixture, and toss.
