Firecracker Chicken Grilled Cheese

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 2 Tbsp olive oil
  • 1 cup Buffalo wing sauce
  • ⅓ cup mayonnaise
  • 12 slices Italian bread
  • 2 avocados, thinly sliced
  • 1 (8-oz) pkg sliced Monterey Jack cheese
  • 2 tomatoes, thinly sliced
  • ¼ cup butter, softened

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium heat until browned, basting with Buffalo sauce during last 3 minutes of cooking. Thinly slice, and wipe skillet clean.
  3. Spread mayonnaise over 6 slices bread. Top each with avocado, chicken, cheese, and tomatoes. Cover with bread slices to make sandwiches.
  4. Spread butter on outsides of sandwiches. Cook sandwiches in skillet over medium heat 3 to 4 minutes per side or until cheese is melted and bread is toasted.

Side Dish Ingredients

  • 1 head green leaf lettuce, chopped
  • 2 sweet apples, chopped
  • ¾ cup Ranch dressing

Side Dish Instructions

  1. Toss together lettuce and apples in a large bowl; add dressing, and toss.
