Spaghetti with Spinach and Fresh Tomato Sauce
Crusty Garlic BreadIngredients
- 1 (16-oz) pkg spaghetti
- 1 (10-oz) pkg spinach
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 4 tomatoes, diced
- ¼ cup chopped fresh basil
- ½ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Cook spinach and garlic in hot oil in a large nonstick skillet over medium heat, stirring often, until spinach is wilted.
- Add tomatoes and basil; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.
