Open-Faced Waffle Sandwiches with Hollandaise Sauce

Ingredients

  • 1 (6-count) pkg frozen Belgian waffles
  • 1 (16-oz) pkg thinly sliced honey ham
  • 6 slices provolone cheese
  • 2 tomatoes, thinly sliced
  • 1 (1.25-oz) pouch hollandaise sauce mix
  • 2 Tbsp butter, divided
  • 6 large eggs

Instructions

  1. Preheat oven to 450°F. Cook waffles according to package directions; place on a baking sheet. Top with ham, cheese, and tomato slices. Bake until cheese is melted.
  2. Meanwhile, prepare hollandaise sauce according to package directions; keep warm.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; crack 3 eggs into skillet, and fry to desired doneness.
  4.  Repeat procedure with 1 Tbsp butter and 3 eggs. Top each waffle sandwich with 1 egg and hollandaise sauce. Season with salt and pepper to taste.
