Grilled Chicken Southwestern Cobb Salad

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 ears corn, shucked
  • 2 Tbsp olive oil
  • 2 Tbsp Southwest seasoning (or use fajita seasoning)
  • 1 (13-oz) pkg Southwest salad kit (such as Dole)
  • 1 (15-oz) can black beans, drained and rinsed
  • 2 avocados, sliced
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat grill to medium-high heat. Rub chicken and corn with oil and seasoning.
  2. Grill chicken, covered, 4 to 5 minutes per side or until done. Grill corn, covered, 2 to 3 minutes per side or until charred. Cut chicken crosswise into slices, and cut kernels from cobs; discard cobs.
  3. Place lettuce from salad kit on a large platter; arrange chicken, corn, beans, avocados, tomatoes, and all ingredients from kit except dressing on lettuce. Drizzle salad with dressing.
