Honey-Soy Salmon
Edamame Basmati Rice
Ingredients
- 1½ lb salmon fillets
- ½ tsp salt
- ½ tsp pepper
- ¼ cup honey
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp grated ginger
Instructions
- Preheat broiler. Place fish on a greased foil-lined baking sheet; sprinkle with salt and pepper. Broil 5 minutes.
- Combine honey, soy sauce, and ginger; brush half of mixture over fish. Broil 2 to 3 minutes longer or until fish flakes with a fork; drizzle remaining honey mixture over fish.
Side Dish Ingredients
- 1 cup brown basmati rice (or use other brown rice)
- 1 cup frozen shelled organic edamame, thawed
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook rice according to package directions, adding edamame during last 3 minutes of cooking.
- Stir in soy sauce and cilantro just before serving.
