Honey-Soy Salmon

Ingredients

  • 1½ lb salmon fillets
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup honey
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp grated ginger

Instructions

  1. Preheat broiler. Place fish on a greased foil-lined baking sheet; sprinkle with salt and pepper. Broil 5 minutes.
  2. Combine honey, soy sauce, and ginger; brush half of mixture over fish. Broil 2 to 3 minutes longer or until fish flakes with a fork; drizzle remaining honey mixture over fish.

Side Dish Ingredients

  • 1 cup brown basmati rice (or use other brown rice)
  • 1 cup frozen shelled organic edamame, thawed
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook rice according to package directions, adding edamame during last 3 minutes of cooking.
  2. Stir in soy sauce and cilantro just before serving.
