Loaded Potato Barbecue Pork Casserole

Ingredients

  • 5 slices bacon, chopped
  • 1½ lb red potatoes, cut into 1-inch pieces
  • ½ (8-oz) block cream cheese
  • 2 Tbsp butter
  • Reserved 2 cups shredded pork (from Pulled Pork Barbecue Sandwiches recipe)
  • 1 cup shredded Cheddar cheese
  • 3 green onions, chopped (optional)

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Boil potatoes in water to cover 10 minutes or until tender; drain and return to saucepan.
  3. Add cream cheese and butter. Using a potato masher, mash potatoes to desired consistency.
  4. Preheat oven to 350°F. Spread potatoes into a greased 8-x 8-inch baking dish. Top with barbecue pork, bacon, and cheese.
  5. Bake 25 minutes. Sprinkle with green onions, if desired.

  • 1 (12-oz) pkg frozen green beans
  • 1 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook green beans according to package directions.
  2. Toss beans with butter in a bowl; sprinkle with salt and pepper.
