Loaded Potato Barbecue Pork Casserole

Ingredients
- 5 slices bacon, chopped
- 1½ lb red potatoes, cut into 1-inch pieces
- ½ (8-oz) block cream cheese
- 2 Tbsp butter
- Reserved 2 cups shredded pork (from Pulled Pork Barbecue Sandwiches recipe)
- 1 cup shredded Cheddar cheese
- 3 green onions, chopped (optional)
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Boil potatoes in water to cover 10 minutes or until tender; drain and return to saucepan.
- Add cream cheese and butter. Using a potato masher, mash potatoes to desired consistency.
- Preheat oven to 350°F. Spread potatoes into a greased 8-x 8-inch baking dish. Top with barbecue pork, bacon, and cheese.
- Bake 25 minutes. Sprinkle with green onions, if desired.

- 1 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook green beans according to package directions.
- Toss beans with butter in a bowl; sprinkle with salt and pepper.
