Peach and Goat Cheese Naan Pizzas

Ingredients

  • 3 (3-oz) pieces naan
  • 1 Tbsp olive oil
  • 3 peaches, pitted and thinly sliced
  • 1 cup freshly shredded mozzarella cheese
  • 1 (6-oz) container crumbled goat cheese (or use feta cheese)
  • ¼ cup thinly sliced red onion
  • ½ cup chopped fresh basil

Instructions

  1. Preheat oven to 425°F.
  2. Place naan on a baking sheet; brush naan with oil.
  3. Top with peaches, mozzarella cheese, goat cheese and onion.
  4. Bake 10 to 15 minutes or until cheeses melt.
  5. Sprinkle with basil before serving.

  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 (10-oz) pkg baby spinach
  • ¼ cup balsamic vinegar
  • ¾ tsp kosher salt
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and spinach; cook 6 minutes or until spinach is wilted, stirring frequently. Stir in balsamic vinegar, salt and crushed red pepper.
