Roast Beef and Cheddar Roll-Ups with Creamy Dijon
Carrot-Bell Pepper Slaw
Ingredients
- ⅓ cup mayonnaise
- 2 Tbsp whole grain Dijon mustard
- 1 lb thinly sliced low-sodium roast beef
- ½ cup freshly shredded sharp Cheddar cheese
- ½ (5-oz) pkg fresh arugula
- ½ cup thinly sliced red onion
Instructions
- Combine mayonnaise and mustard; set aside.
- Stack roast beef slices in 8 piles on a flat work surface.
- Top roast beef evenly with mayonnaise mixture, cheese, arugula, and red onion.
- Roll up; secure with toothpicks.

- 4 carrots, grated
- 2 red bell peppers, thinly sliced
- 2 Tbsp fresh lemon juice
- 2 Tbsp extra virgin olive oil
- 1½ tsp honey
- ¼ tsp salt
- ¼ tsp pepper
