Ingredients

  • ⅓ cup mayonnaise
  • 2 Tbsp whole grain Dijon mustard
  • 1 lb thinly sliced low-sodium roast beef
  • ½ cup freshly shredded sharp Cheddar cheese
  • ½ (5-oz) pkg fresh arugula
  • ½ cup thinly sliced red onion

Instructions

  1. Combine mayonnaise and mustard; set aside.
  2. Stack roast beef slices in 8 piles on a flat work surface.
  3. Top roast beef evenly with mayonnaise mixture, cheese, arugula, and red onion.
  4. Roll up; secure with toothpicks.

  • 4 carrots, grated
  • 2 red bell peppers, thinly sliced
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp extra virgin olive oil
  • 1½ tsp honey
