Orzo with Spinach

Ingredients

  • 1 lb boneless, skinless chicken breasts, halved lengthwise
  • 1 red bell pepper, cut into chunks
  • ½ red onion, cut crosswise into rings
  • 1½ Tbsp olive oil
  • 1 Tbsp minced garlic
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ¼ cup pitted kalamata olives
  • ½ Tbsp chopped fresh oregano
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Toss together chicken, bell pepper, onion, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer. Bake 20 to 25 minutes or until chicken is done.
  2. Stir olives and oregano into bell pepper mixture; sprinkle with cheese.

  • ¾ cup orzo (preferably whole wheat)
  • ½ (6-oz) pkg baby spinach
  • 1 Tbsp extra virgin olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Transfer hot cooked orzo to a bowl; toss with spinach and remaining ingredients.
