Grilled Pork Chops with Peach-Mint Salsa

Ingredients
- 1 Tbsp fresh lime juice, divided
- 2 tsp white balsamic vinegar
- 2 tsp honey
- 1 Tbsp olive oil, divided
- 2 (6-oz) bone-in pork chops
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 peach, halved and pitted
- 2 tsp chopped fresh mint
- 1 Tbsp minced shallot
Instructions
- Preheat grill to medium-high heat. Combine ½ Tbsp lime juice, vinegar, honey, and ½ Tbsp oil; brush onto pork.
- Sprinkle pork with ⅛ tsp each salt and pepper. Brush peach with ½ Tbsp oil; sprinkle with ⅛ tsp each salt and pepper.
- Grill pork, covered, 3 to 4 minutes per side or until done. Grill peach, cut sides down and covered, 4 minutes or until tender.
- Coarsely chop peach; toss with mint, shallot, and ½ Tbsp lime juice. Serve salsa over pork.
