Grilled Pork Chops with Peach-Mint Salsa

Ingredients

  • 1 Tbsp fresh lime juice, divided
  • 2 tsp white balsamic vinegar
  • 2 tsp honey
  • 1 Tbsp olive oil, divided
  • 2 (6-oz) bone-in pork chops
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 peach, halved and pitted
  • 2 tsp chopped fresh mint
  • 1 Tbsp minced shallot

Instructions

  1. Preheat grill to medium-high heat. Combine ½ Tbsp lime juice, vinegar, honey, and ½ Tbsp oil; brush onto pork.
  2. Sprinkle pork with ⅛ tsp each salt and pepper. Brush peach with ½ Tbsp oil; sprinkle with ⅛ tsp each salt and pepper.
  3. Grill pork, covered, 3 to 4 minutes per side or until done. Grill peach, cut sides down and covered, 4 minutes or until tender.
  4. Coarsely chop peach; toss with mint, shallot, and ½ Tbsp lime juice. Serve salsa over pork.

  • 1 Tbsp butter
  • ¼ tsp garlic salt
  • ¼ tsp pepper

  1. Cook green beans according to package directions. Toss with butter, garlic salt, and pepper.
