Creamy Mushroom and Spinach Pasta

Ingredients

  • 1 (13.25-oz) pkg whole-grain spaghetti
  • 2 (16-oz) pkg sliced mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ¾ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil
  • 1 cup dry white wine
  • 2 cups low-sodium vegetable broth
  • 1 (8-oz) block cream cheese, cut into pieces and softened
  • 1 (10-oz) pkg organic baby spinach

Instructions

  1. Cook spaghetti according to package directions.
  2. Meanwhile, sauté mushrooms, onion, garlic, salt, and pepper in hot oil in a large Dutch oven over medium heat 15 to 20 minutes or until mushrooms are browned.
  3. Add wine and broth, stirring to loosen browned bits. Bring to a boil; gradually add cream cheese, stirring until melted after each addition.
  4. Cook 5 minutes or until liquid is slightly reduced and sauce is thickened; add spinach. Cook 3 minutes or until wilted; stir in spaghetti, and season with additional salt and pepper, if desired.

Side Dish Ingredients

  • 1 (16-oz) pkg organic strawberries, sliced
  • 3 Tbsp balsamic vinegar
  • 2 (5.3-oz) cartons plain Greek yogurt
  • 6 Tbsp honey

Side Dish Instructions

  1. Combine strawberries and vinegar in a bowl; let stand at room temperature 30 minutes.
  2. Divide yogurt among 6 bowls; top with strawberries, and drizzle with honey.
