Creamy Mushroom and Spinach Pasta
Balsamic Strawberries with Yogurt and Honey
Ingredients
- 1 (13.25-oz) pkg whole-grain spaghetti
- 2 (16-oz) pkg sliced mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- ¾ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
- 1 cup dry white wine
- 2 cups low-sodium vegetable broth
- 1 (8-oz) block cream cheese, cut into pieces and softened
- 1 (10-oz) pkg organic baby spinach
Instructions
- Cook spaghetti according to package directions.
- Meanwhile, sauté mushrooms, onion, garlic, salt, and pepper in hot oil in a large Dutch oven over medium heat 15 to 20 minutes or until mushrooms are browned.
- Add wine and broth, stirring to loosen browned bits. Bring to a boil; gradually add cream cheese, stirring until melted after each addition.
- Cook 5 minutes or until liquid is slightly reduced and sauce is thickened; add spinach. Cook 3 minutes or until wilted; stir in spaghetti, and season with additional salt and pepper, if desired.
Side Dish Ingredients
- 1 (16-oz) pkg organic strawberries, sliced
- 3 Tbsp balsamic vinegar
- 2 (5.3-oz) cartons plain Greek yogurt
- 6 Tbsp honey
Side Dish Instructions
- Combine strawberries and vinegar in a bowl; let stand at room temperature 30 minutes.
- Divide yogurt among 6 bowls; top with strawberries, and drizzle with honey.
