Ingredients

  • 1½ cups bulgur wheat
  • 2 (15-oz) cans black beans, drained and rinsed
  • 2 cups corn kernels
  • 1 cup fresh salsa
  • 1 cup chopped fresh cilantro
  • 1 cup chopped onion
  • ⅓ cup cilantro-lime vinaigrette (such as Sam's Choice)
  • 1 Tbsp Southwest seasoning (or use fajita seasoning)

Instructions

  1. Cook bulgur according to package directions.
  2. Combine bulgur, beans, corn, salsa, cilantro, and onion in a large bowl. Whisk together vinaigrette and seasoning; pour over bulgur mixture, and stir until blended.

Side Dish Ingredients

  • 2 avocados, sliced
  • 2 Tbsp fresh lime juice
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • ¼ cup crumbled cotija cheese

Side Dish Instructions

  1. Place avocados on a platter. Drizzle with lime juice and oil; sprinkle with salt, pepper, and cheese.
