Meatball Banh Mi Sandwiches
Vietnamese Loaded Fries
Ingredients
- ½ (28-oz) pkg frozen meatballs
- 1 (10-oz) pkg angel hair coleslaw
- 1 cup matchstick-cut carrots
- ⅓ cup chopped fresh cilantro
- 1 Tbsp dark sesame oil
- 1 Tbsp rice wine vinegar
- 2 Tbsp mayonnaise
- ½ Tbsp Sriracha hot sauce
- 2 sub rolls, split and toasted
Instructions
- Bake meatballs according to package directions.
- Meanwhile, toss together coleslaw, carrots, cilantro, oil, and vinegar in a large bowl; season with salt and pepper to taste.
- Stir together mayonnaise and Sriracha. Spread mixture on cut side of rolls. Serve meatballs on rolls with desired amount of coleslaw.
Side Dish Ingredients
- ½ (28-oz) pkg frozen extra-crunchy French fries
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 Tbsp Sriracha hot sauce
- ¼ cup chopped salted peanuts
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Bake fries according to package directions.
- Meanwhile, sauté garlic in hot oil in a small skillet over medium heat 1 minute. Season fries with salt and pepper to taste; toss with garlic and oil, and place on a platter.
- Drizzle with hot sauce; top with nuts and cilantro.
