Chicken with Balsamic-Nectarine Sauce
Garlicky Roasted Broccolini
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ¾ tsp salt
- ½ tsp pepper
- ¼ cup olive oil, divided
- 1 (5-oz) pkg sliced onions
- ½ cup white balsamic vinegar
- ¼ cup honey
- 10 sprigs fresh thyme
- 6 nectarines, pitted and quartered
- 2 Tbsp fresh lemon juice
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken, in batches, in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet, and keep warm.
- Cook onion in 2 Tbsp hot oil in skillet over medium-high heat 5 minutes. Add vinegar, honey, and thyme. Bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened.
- Discard thyme; stir in nectarines and lemon juice. Cook 1 minute or until nectarines are tender. Serve sauce over chicken.

- 2 bunches Broccolini, trimmed
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together Broccolini, oil, garlic, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
- Bake 8 minutes; stir. Bake 2 to 4 minutes longer or until browned.
