Creole Sausage with Beans

Steamed Rice and Crunchy Garlic Bread

Ingredients

  • ½ (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
  • ½ cup chopped onion
  • ½ green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp vegetable oil
  • 1 (15-oz) can red beans, drained and rinsed
  • 1 (8-oz) can tomato sauce
  • ½ cup chicken broth
  • 1 tsp Creole seasoning
  • ½ tsp chili powder

Instructions

  1. Cook sausage, onion, bell pepper, and garlic in hot oil in a nonstick skillet over medium heat, stirring occasionally, until sausage is browned.
  2. Add beans, tomato sauce, broth, Creole seasoning, and chili powder; bring to a boil, reduce heat, and simmer 15 minutes, stirring occasionally. Serve over rice.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • ½ (16-oz) loaf French bread, halved lengthwise
  • 4 Tbsp butter, melted
  • 1 clove garlic, minced

Side Dish Instructions

  1. Cook rice according to package directions; season with salt and pepper to taste.
  2. Preheat broiler. Place bread, cut sides up, on a baking sheet; brush with butter, and spread with garlic. Broil 4 to 5 minutes or until toasted.
