Creole Sausage with Beans
Steamed Rice and Crunchy Garlic Bread
Ingredients
- ½ (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
- ½ cup chopped onion
- ½ green bell pepper, chopped
- 2 cloves garlic, minced
- 1 Tbsp vegetable oil
- 1 (15-oz) can red beans, drained and rinsed
- 1 (8-oz) can tomato sauce
- ½ cup chicken broth
- 1 tsp Creole seasoning
- ½ tsp chili powder
Instructions
- Cook sausage, onion, bell pepper, and garlic in hot oil in a nonstick skillet over medium heat, stirring occasionally, until sausage is browned.
- Add beans, tomato sauce, broth, Creole seasoning, and chili powder; bring to a boil, reduce heat, and simmer 15 minutes, stirring occasionally. Serve over rice.
Side Dish Ingredients
- ¾ cup long-grain white rice
- ½ (16-oz) loaf French bread, halved lengthwise
- 4 Tbsp butter, melted
- 1 clove garlic, minced
Side Dish Instructions
- Cook rice according to package directions; season with salt and pepper to taste.
- Preheat broiler. Place bread, cut sides up, on a baking sheet; brush with butter, and spread with garlic. Broil 4 to 5 minutes or until toasted.
