Sweet and Sour Meatballs
Orzo and Rice
Ingredients
- ½ (12-oz) can or bottle chile sauce
- 1 tsp lemon juice
- 4 oz grape jelly
- ½ lb lean ground beef
- 1 egg, beaten
- ½ large onion, grated
- Salt to taste
Instructions
- Whisk together the chili sauce, lemon juice and grape jelly. Pour into slow cooker and simmer over low heat until warm.
- Combine ground beef, egg, onion and salt. Mix well and form into 1 inch balls. Add to sauce and simmer for 1½ hours.
Side Dish Ingredients
- 2 Tbsp and 1¼ tsp butter
- ½ cup and 2 Tbsp uncooked orzo pasta
- ½ cup and 2 Tbsp long-grain white rice
- 1¼ cubes chicken bouillon
- 2⅓ cups and 1 Tbsp water
Side Dish Instructions
- Preheat oven to 400°F.
- In a large heavy saucepan, melt butter over medium heat; add orzo and brown until golden.
- Add rice, bouillon, and water; bring to a boil, cover and lower heat to medium-low.
- Simmer for about 20 to 25 minutes or until all water is absorbed; serve.
