Creole Sausage with Beans

Ingredients

  • 1 (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp vegetable oil
  • 2 (15-oz) cans red beans, drained and rinsed
  • 1 (15-oz) can tomato sauce
  • 1 cup chicken broth
  • 2 tsp Creole seasoning
  • 1 tsp chili powder

Instructions

  1. Cook sausage, onion, bell pepper, and garlic in hot oil in a large nonstick skillet over medium heat, stirring occasionally, until sausage is browned.
  2. Add beans, tomato sauce, broth, Creole seasoning, and chili powder; bring to a boil, reduce heat, and simmer 15 minutes, stirring occasionally. Serve over cauliflower rice.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in oil and salt and pepper to taste.
