Creole Sausage with Beans
Cauliflower "Rice"Ingredients
- 1 (14-oz) pkg smoked sausage, cut into ¼-inch-thick slices
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp vegetable oil
- 2 (15-oz) cans red beans, drained and rinsed
- 1 (15-oz) can tomato sauce
- 1 cup chicken broth
- 2 tsp Creole seasoning
- 1 tsp chili powder
Instructions
- Cook sausage, onion, bell pepper, and garlic in hot oil in a large nonstick skillet over medium heat, stirring occasionally, until sausage is browned.
- Add beans, tomato sauce, broth, Creole seasoning, and chili powder; bring to a boil, reduce heat, and simmer 15 minutes, stirring occasionally. Serve over cauliflower rice.

- 2 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
- 2 Tbsp olive oil
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir in oil and salt and pepper to taste.
