Mediterranean Baked Cod

Ingredients

  • 1 Tbsp olive oil
  • 1 onion, thinly sliced
  • 6 oz mini sweet peppers
  • Kosher salt
  • Pepper
  • 1 pint grape tomatoes, halved
  • 8 sprigs fresh thyme
  • 1½ lb cod fillets
  • Whole-grain rolls, for serving

Instructions

  1. Heat oven to 450°F. Heat oil in large oven-safe skillet on medium-high. Add onion, sweet peppers and ¼ tsp salt and cook, stirring occasionally, until onion is almost tender, about 5 minutes.
  2. Stir in tomatoes and thyme sprigs and cook 2 minutes. Nestle cod among the vegetables and season cod with ¼ tsp each salt and pepper.
  3. Add ¼ cup water to skillet, cover, transfer to oven and roast until cod is opaque throughout, 12 to 15 minutes. Discard thyme sprigs and serve with whole-grain rolls, if desired.
