Mediterranean Baked Cod
Ingredients
- 1 Tbsp olive oil
- 1 onion, thinly sliced
- 6 oz mini sweet peppers
- Kosher salt
- Pepper
- 1 pint grape tomatoes, halved
- 8 sprigs fresh thyme
- 1½ lb cod fillets
- Whole-grain rolls, for serving
Instructions
- Heat oven to 450°F. Heat oil in large oven-safe skillet on medium-high. Add onion, sweet peppers and ¼ tsp salt and cook, stirring occasionally, until onion is almost tender, about 5 minutes.
- Stir in tomatoes and thyme sprigs and cook 2 minutes. Nestle cod among the vegetables and season cod with ¼ tsp each salt and pepper.
- Add ¼ cup water to skillet, cover, transfer to oven and roast until cod is opaque throughout, 12 to 15 minutes. Discard thyme sprigs and serve with whole-grain rolls, if desired.
