Spaghetti with Spinach and Fresh Tomato Sauce

Ingredients

  • ½ (16-oz) pkg spaghetti
  • ½ (10-oz) pkg spinach
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 2 tomatoes, diced
  • 2 Tbsp chopped fresh basil
  • ¼ cup (or more) shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Cook spinach and garlic in hot oil in a large nonstick skillet over medium heat, stirring often, until spinach is wilted.
  3. Add tomatoes and basil; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.
