Cracker-Coated Chicken
Cheesy Pasta and Herbed Peas with Butter
Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- 2 egg whites, lightly beaten
- 1 sleeve round buttery crackers, crushed
- 2 tsp dried thyme
- 6 slices Havarti cheese
Instructions
- Preheat oven to 350ºF.
- Pound chicken to an even thickness in a zip-top plastic bag with the heel of your hand or a meat mallet. Lightly season chicken with salt and pepper. Dip chicken in beaten egg whites.
- Stir together cracker crumbs and thyme in a shallow dish; dredge chicken in mixture.
- Place chicken on a greased rimmed baking sheet. Bake 15 minutes. Top each piece of chicken with a slice of cheese. Bake 5 minutes longer or until chicken is done.

- 1 (9.6-oz) box angel hair pasta with herbs
- 1 (15-oz) pkg frozen peas
- 2 Tbsp butter
- 1 Tbsp chopped fresh parsley
Side Dish Instructions
- Cook pasta according to package directions.
- Steam peas according to package directions. Stir in butter and parsley; season to taste with salt and pepper.
