Cheesy Pasta and Herbed Peas with Butter

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 egg whites, lightly beaten
  • 1 sleeve round buttery crackers, crushed
  • 2 tsp dried thyme
  • 6 slices Havarti cheese

Instructions

  1. Preheat oven to 350ºF.
  2. Pound chicken to an even thickness in a zip-top plastic bag with the heel of your hand or a meat mallet. Lightly season chicken with salt and pepper. Dip chicken in beaten egg whites.
  3. Stir together cracker crumbs and thyme in a shallow dish; dredge chicken in mixture.
  4. Place chicken on a greased rimmed baking sheet. Bake 15 minutes. Top each piece of chicken with a slice of cheese. Bake 5 minutes longer or until chicken is done.

Side Dish Ingredients

  • 1 (9.6-oz) box angel hair pasta with herbs
  • 1 (15-oz) pkg frozen peas
  • 2 Tbsp butter
  • 1 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Steam peas according to package directions. Stir in butter and parsley; season to taste with salt and pepper.
