Mediterranean Pasta Salad with Shrimp

Ingredients

  • 4 oz whole-grain rotini pasta
  • ½ lb peeled and deveined, raw wild-caught shrimp (see note)
  • 1 tomato, seeded and chopped
  • ¼ cup crumbled reduced-fat feta cheese
  • 8 pitted kalamata olives, chopped
  • 1 clove garlic, minced
  • 1 Tbsp dried basil
  • 1 Tbsp extra virgin olive oil
  • 2 tsp fresh lemon juice
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook pasta according to package directions, adding shrimp during last 4 minutes of cooking. Drain and rinse under cold water to cool.
  2. Transfer pasta mixture to a large bowl. Add all ingredients; toss to combine.

Side Dish Ingredients

  • Juice of ½ lemon
  • 1½ cups cubed cantaloupe

Side Dish Instructions

  1. Drizzle lemon juice over cantaloupe. Serve alongside pasta.
