Mediterranean Pasta Salad with Shrimp
Chilled Cantaloupe
Ingredients
- 4 oz whole-grain rotini pasta
- ½ lb peeled and deveined, raw wild-caught shrimp (see note)
- 1 tomato, seeded and chopped
- ¼ cup crumbled reduced-fat feta cheese
- 8 pitted kalamata olives, chopped
- 1 clove garlic, minced
- 1 Tbsp dried basil
- 1 Tbsp extra virgin olive oil
- 2 tsp fresh lemon juice
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
Instructions
- Cook pasta according to package directions, adding shrimp during last 4 minutes of cooking. Drain and rinse under cold water to cool.
- Transfer pasta mixture to a large bowl. Add all ingredients; toss to combine.
Side Dish Ingredients
- Juice of ½ lemon
- 1½ cups cubed cantaloupe
Side Dish Instructions
- Drizzle lemon juice over cantaloupe. Serve alongside pasta.
