Turkey Burgers with Pineapple "Buns"
Grilled Smoky Sweet Potatoes
Ingredients
- 8 slices bacon
- 6 (4-oz) frozen turkey burgers (such as Applegate Organics)
- 6 (0.75-oz) slices pepper-Jack cheese (such as Sargento)
- 1 (16-oz) container cored pineapple, cut into 12 rings
- 1 red onion, cut into rings
- ½ cup roasted garlic mayonnaise (such as Hellmann's)
- 1 Tbsp chopped fresh tarragon
- 6 curly green leaf lettuce leaves
Instructions
- Preheat grill to medium-high heat. Cook bacon according to package directions until crisp; drain.
- Grill burgers according to package directions for grill, topping with cheese during last 2 minutes of cooking. Grill pineapple and onion, covered, 3 minutes per side or until charred.
- Combine mayonnaise and tarragon. Top half of pineapple with lettuce, burgers, tarragon mayo, bacon, and onion; cover with remaining pineapple.
Side Dish Ingredients
- 4 small sweet potatoes
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 tsp smoked paprika
- 2 green onions, chopped
Side Dish Instructions
- Preheat grill to medium-high heat. Microwave potatoes at HIGH 5 minutes or until crisp-tender. Let stand until cool enough to handle (about 10 minutes). Cut lengthwise into wedges.
- Toss potatoes with garlic, oil, and paprika. Grill, covered, 3 minutes per side or until charred and tender. Sprinkle with onions. Season with salt and pepper to taste.
