Quinoa-Strawberry Superfood Salad
Ingredients
- ¼ cup quinoa
- 4 cups baby kale
- ⅔ cup sliced strawberries
- 1 cup shredded rotisserie chicken
- ¼ cup crumbled feta cheese
- ¼ cup glazed walnut pieces (such as Fresh Gourmet)
- ½ avocado, cubed
- 3 Tbsp light raspberry vinaigrette (such as Kraft)
Instructions
- Prepare quinoa according to package directions. Cool slightly.
- Toss together kale, quinoa, strawberries, and chicken in a bowl. Sprinkle with cheese, nuts, and avocado; drizzle with vinaigrette.
