Mediterranean Shrimp and Pasta Salad
Ingredients
- 1 (16-oz) pkg bow-tie pasta
- 1½ lb fresh or frozen (thawed) medium-size shrimp, peeled and deveined
- 1 tsp garlic salt
- 1 tsp pepper
- 2 Tbsp olive oil
- 1 (10-oz) pkg spinach
- 1 English cucumber, peeled and chopped
- 3 Roma tomatoes, chopped
- 1 (4-oz) pkg crumbled feta cheese
- 6 green onions, sliced
- ½ (16-oz) bottle Greek dressing
Instructions
- Cook pasta according to package directions; drain and place in a large bowl.
- Sprinkle shrimp with garlic salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 3 minutes or until shrimp turn pink. Transfer to bowl with pasta.
- Add spinach, cucumber, tomatoes, cheese, and onions to pasta mixture; toss. Add desired amount of dressing; toss.
