Mediterranean Shrimp and Pasta Salad

Ingredients

  • 1 (16-oz) pkg bow-tie pasta
  • 1½ lb fresh or frozen (thawed) medium-size shrimp, peeled and deveined
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg spinach
  • 1 English cucumber, peeled and chopped
  • 3 Roma tomatoes, chopped
  • 1 (4-oz) pkg crumbled feta cheese
  • 6 green onions, sliced
  • ½ (16-oz) bottle Greek dressing

Instructions

  1. Cook pasta according to package directions; drain and place in a large bowl.
  2. Sprinkle shrimp with garlic salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 3 minutes or until shrimp turn pink. Transfer to bowl with pasta.
  3. Add spinach, cucumber, tomatoes, cheese, and onions to pasta mixture; toss. Add desired amount of dressing; toss.
